A Whimsical Tale of Summer Herbs & Golden Spirals

There's a certain magic that happens when flour meets butter, when garden herbs dance with golden cheese, and when your kitchen fills with the most heavenly aromas. This darling braided beauty isn't merely bread—oh no! It's a little slice of summer enchantment, twisted and coiled like something from a fairy tale cookbook... literally.
Born from a touch of Disney whimsy and kissed with garden-fresh herbs, this golden treasure transforms humble ingredients into something rather extraordinary. Originally I came across a similar recipe in the Disney: Cooking With Magic cookbook; after following the recipe I found that saffron wasn't my thing (at least in bread) and the overall flavor was quite bland. So I revamped the recipe to fit what I was looking for. I added some of my favorite cheeses, more herbs, and salted butter instead of unsalted. It turned out so good, I just have to share it! Now it tastes just as beautiful as it looks.

Directions
For the Enchanted Dough:
1 plump russet potato, peeled and diced
2 cups water
6 tbsp salted butter, softened to perfection
1 tsp fine salt
½ tsp golden turmeric (for that sunshine glow)
¼ tsp smoked paprika (optional, but oh-so-lovely)
2 cups bread flour
2–2½ cups unbleached all-purpose flour
2 packets active dry yeast (0.25 oz total)
2 large eggs
A splash of olive oil for greasing
For the Garden Filling:
4 tbsp salted butter, soft as morning clouds
½ cup shredded Gruyère (the sophisticated one)
½ cup shredded Gouda (the mellow sweetheart)
4 garlic cloves, minced fine
1½ tsps fresh rosemary, chopped with love
1 tsp fresh thyme (if the garden provides)
2 tbsp creamy goat cheese
The Magical Method
Chapter 1: Crafting the Dough Begin by tenderly boiling your potato until it surrenders to a fork's gentle touch. Mash it with butter, salt, turmeric, and paprika until it resembles sunshine itself. In your largest mixing bowl, combine the bread flour, yeast, this golden potato mixture, and eggs. Gradually fold in the all-purpose flour until a soft, willing dough emerges. Knead with gentle determination for about 10 minutes until it becomes silky and elastic. Tuck it into an oiled bowl, cover with a tea towel, and let it dream and double in size.
Chapter 2: The Art of Assembly Roll your risen dough into a generous 20x12 inch rectangle; think of it as your canvas. In a small bowl, marry the softened butter with garlic, herbs, and goat cheese until they're beautifully acquainted. Paint this aromatic mixture across your dough canvas, then shower it with the shredded cheeses like golden confetti.
Now comes the delightful part: roll it up snugly from the long side, then slice it lengthwise down the center with a sharp knife. Twist these two halves into a rustic braid; don't fret about perfection, rustic charm is far more endearing! Coil it into a lovely round and nestle it in a well-loved skillet. Cover once more and let it rise for another 40 minutes or so.
Chapter 3: The Golden Finale Preheat your oven to a cozy 375°F. Slide your braided beauty into the oven and bake for 30-40 minutes until it's gloriously golden. If it begins to blush too deeply, simply tent it with foil halfway through; we want golden, not bashful! Allow it to cool just enough so you don't burn your eager fingers when slicing.
